It’s in the blood. Meet Brian Dalzell

There’s a certain pride in being a born, bred, raised, educated, trained, moisture-infused, crumbed, minced and marinated butcher. Brian comes from a strong line of Irish generational butchers—and it shows.

Brian knows his stuff and we’re proud to have him on board as our retail manager, managing both our Taringa and Sumner stores. The mind behind the scenes, Brian is responsible for making sure everything runs smoothly and our shops are continuously kept to the high standard our customers have grown to expect.

Well known to our regulars, Brian is always available to chat to customers and makes a point of personally welcoming new visitors whenever possible. Anyone who knows Brian will readily agree, he’s a true gentleman and will always, always put our customers first.

Brian’s favourite cut of meat/meal: Wagyu rib fillet. chips & salad
